Brewology is a colloquial term that has been popularized by the craft beer movement and refers to the study of beer and beer-making; the science of beer. Our mission is to satiate the ever growing appetite for small-batch, craft beer and pair it with fresh food executed at the highest level. We have expertly selected a variety of craft beers that is showcased on our custom tap tower prominently displayed in the center of the bar.
The only thing more serious than our beer is our food. Executive Chef Chris Zullo has masterfully prepared a menu that incorporates fresh, local ingredients with a well-executed twist on modern bar cuisine. The idea is to compose a menu that will not only highlight the nuanced flavors in our craft beers but to allow these craft beers to complement the expertly executed dishes.
The interior décor was inspired by a design concept that has become increasingly popular in Europe and now in the U.S. called “French Industrial.” It is an homage to a time when crafting things by hand and spending the time to focus on the details yielded a superior product. Our furniture and most of the décor is hand built by local craftsmen in East Moriches using reclaimed wood and recycled steel to create an inviting, casual atmosphere that instills quality.

From the industrial décor to the playful menu featuring shared portions and pairings, Brewology will be serving a smart generation that is keen on its food and educated about its beer. The menu will be designed to allow diners to enjoy a multicourse meal and pair it with amazing libations from start to finish. Weekly beer tastings will ensure that patrons can try something new every time they walk in the door.
